Moreover, only 10% of dietitians offered food substitutions as a strategy to avoid food allergies and did not implement a policy of no sharing foods among students and no use of latex gloves for food service workers when they prepared food substitutions. It seems that the current management of food allergies in school meal service is not sufficient. The findings of the current study could be used to improve prevention and management of food allergies at school.
