김치저장 기간을 연장할 목적으로 숙성된 김치에 1, 3, 5kGy의 감마선을 조사하고 $5^{circ}C$에서 냉장하면서 저장하는 동안 미생물의 생육과 김치품질에 관련된 이화학적, 관능적 시험을 수행한 결과는 다음과 같다. 1. 미생물 생육시험에서 호기성세균은 저장초기에 증가하나 유산균(혐기성 세균)의 증가와 함께 감소되는 경향이며, 방사선조사에 의해 호기성세균과 유산균이 1-3 log cycles 정도 살균되었다. 3kGy 조사구는 저장 90일에도 유산균수가 $1.3{ imes}10^{8}/m{ell}$정도로 낮았다. 대장균과 곰팡이는 $2.0{...
