과실 및 채소의 신선편의 식품화 개발기술에 관한 연구

신선편의화된 신고배를 이용하여 연구를 수행한 결과 처리구 중에서 1% NaCl과 0.2% L-cysteine 용액에 1분간 처리한 절단배의 색도가 가장 적게 변화하였으며, 1% CaCl, 용액처리한 것이 가장 높은 경도를 나타내었다.
